White Chicken Chili

We got some snow yesterday and I automatically thought of chili for dinner! For a healthier option we did this White Chicken Chili recipe. We used our Ninja Foodi and I share the directions for that below. But you can try this recipe in your slow cooker, crockpot or dutch oven.

Ingredients:
6-8 boneless pieces of chicken breasts, cubed – or – 1 rotisserie chicken, shredded
2 14.5 ounce cans of white beans
4 cups low-sodium chicken broth
1 large onion, chopped
8 garlic cloves, minced
Salt and pepper to taste
1 tbsp. ground cumin
1 1/2 tsp. ground coriander
1 tsp. chili powder
1/4 cup fresh cilantro, chopped
Sour cream for topping
Tortilla chips for topping
2 limes cut into wedges for topping

Directions for the Ninja Foodi:
– Place chicken, beans, garlic, onion, and broth into pot and set to PRESSURE on HIGH for 15 min. Make sure pressure valve is in SEAL position.
– When pressure cooking is complete, quick release the pressure valve by moving it to the VENT position.
– Once all the pressure is released, open the pot and add cilantro and the spices. Set to SEAR/SAUTEE for 5 min.
– Serve in bowls. Top with sour cream, lime and tortilla chips.
– Enjoy!
